Gluten Free Oatmeal Cookies

I have attempted to make the first batch of oatmeal cookies. They are OK not great. I am again using quinoa instead of oats. I found the quinoa was stronger than I wanted in flavour. I will go back to the drawing board and adjust the prototype recipe. I will keep you posted.

Gluten Free Comfort Food Recipe

Good Morning to all,

So, when I did my run yesterday in the freezing cold, my comfort food of choice was Vegetarian chili. I went shopping that afternoon for my ingredients. This recipe is a wing it type and it turned out fabulous. The following is the recipe I came up with. If you can afford it, organic ingredients is best. I used lupin beans as they are very similar to soy beans in nutritional value, and add a bit of texture to the chili.

Vegetarian Chili
3 ribs celery
1 large carrot, scrubbed skin left on
1 medium green peppers
1/2 Lb cremini mushrooms
1 medium green zucchini
1 medium cooking onion
1 28 oz tin diced tomatoes
1 19 oz tin of red kidney beans
1 19 oz tin of Lupin beans
1 6 0z tin of tomato paste
4 clove garlic chopped
6 drops liquid smoke
1/2 of a pod of vanilla scrapped
1/2 tsp chili flakes
3 tbsp heaping of chili powder
3 tbsp olive oil
1/2 cup shredded cheddar (optional)
Salt and pepper to taste

Directions:
Chop all vegetables 1" chop. Heat oil in a large pot over medium high heat, add vegetables, salt and pepper and saute for 8 minutes, add garlic saute for another 2 minutes. Add remaining ingredients except cheese and blend well. Reduce heat to simmer, and cover. Simmer for 1 1/2 hours stirring occasionally. Adjust seasoning to taste.

Serves 6
Top with cheese if desired.

Sunday Mornings, Guten Free comfort Foods

I got up today and it's really cold -18c. I have to run at 8:30am with my running group. These cold winter days remind me of comfort foods. Today I will create a food that is good for the soul. Not sure exactly what, I will let my run inspire me. I will keep you posted with what I came up with.

Say hello to gluten free date squares

Hello to all,

Well today I tackled the date squares, and on first try they turned out awesome. I had staff and customers sample for feed back. Great reviews all around. Take note that the one comment was that you can really taste the citrus. So if citrus flavor is not your bag then just cut out the zest from the recipe. I also opted to use quinoa flakes instead of gluten free oats. Quinoa is an amazing seed that comes from a species of goosefoot. It is a complete protein all on its own. I hope you will try this recipe and let us know what you think.

Ya'd Never Know date squares (Just like Granny's)
Filling
250 ml hot water
908 grams dates (pitted)
115 grams organic sugar
1/4 tsp salt
125 ml fresh squeezed organic orange juice (2 large oranges) + zest from 1 orange
20 ml Lemon juice
10 ml Pure vanilla extract

Put all ingredients in a pot and simmer until all liquid is absorbed and date are completely soft,
cool mixture.

Crumb mixture
418 grams Ya'd never know all purpose flour blend
328 grams organic quinoa flakes
647 grams organic brown sugar
454 grams melted organic butter
1 tsp baking soda

Preheat oven 350F- 185C
In a bowl mix all dry ingredients well. Add melted butter to dry and mix well
Pat 1/2 the mixture into a parchment lined 12x 18 pan
Spread filling evenly over crumbs.
Top filling with remaining crumbs, lightly pat.
Bake for 30 minutes

I did deliveries this morning to 2 of our retailers that carrier our product. Redstones in Carlisle and Jummbleberrys in Burlington. It amusing a comment that one of the stores made. They told me we are like a cult and have this following for our product line Y'ad never know. Slowly we are making people aware of a healthier and tastier way of eating.
Check out these stores, they not only carry our products, they also carry other prodcuts of companies that are of like minds of health, local and organic whenever psossible.
